Red Rice Stuffed Portobello Mushrooms

Ingredients

  • 1 cup Agriko red rice, cooked
  • 8 medium Portobello mushroom caps, stems removed
  • 3 cloves garlic, minced
  • ½ cup diced red bell pepper
  • ¼ cup diced red onion
  • 3 tablespoons extra virgin olive oil
  • ¼ cup grated Parmesan cheese
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C). Clean the Portobello mushroom caps with a damp cloth and gently scrape out the dark gills with a spoon. Lightly brush both sides with olive oil and place on a baking sheet, gill-side up.

  2. Heat 2 tablespoons of olive oil in a large skillet over medium heat. Sauté minced garlic, diced red onion, and red bell pepper until softened, about 4-5 minutes.

  3. Fold in the cooked Agriko red rice, dried oregano, half of the fresh parsley, and season with salt and pepper to taste. Stir gently until well combined, then remove from heat.

  4. Divide the red rice mixture evenly among the mushroom caps, mounding it gently in the center of each cap. Top each stuffed mushroom with a tablespoon of grated Parmesan cheese.

  5. Bake in the preheated oven for 18-20 minutes, until the mushrooms are tender and the rice filling is heated through and lightly golden on top.

  6. Remove from oven and garnish with remaining fresh parsley. Drizzle with a touch of olive oil if desired, and serve warm as an elegant snack or light appetizer.
