Ingredients

  • 1 cup Agriko red rice, cooked and cooled
  • 3/4 cup rolled oats
  • 1/3 cup almond butter
  • 1/4 cup raw honey or agave nectar
  • 2 tablespoons unsweetened cocoa powder
  • 1/4 teaspoon sea salt
  • 1/2 teaspoon vanilla extract
  • 2 tablespoons shredded coconut (for rolling)

Instructions

  1. Cook Agriko red rice according to package directions. Spread cooled rice on a plate to fully cool before using.

  2. In a large mixing bowl, combine cooled red rice, rolled oats, almond butter, honey, cocoa powder, sea salt, and vanilla extract.

  3. Mix thoroughly with a wooden spoon or your hands until the mixture is well combined and sticky enough to hold together.

  4. Refrigerate the mixture for 10 minutes to make it easier to handle and shape.

  5. Scoop tablespoon-sized portions of the mixture and roll between your palms into smooth, compact balls.

  6. Roll finished balls in shredded coconut for coating, then place on a parchment-lined tray.

  7. Store in an airtight container in the refrigerator for up to 7 days, or freeze for up to 2 months.

For easier rolling, lightly wet your palms with water to prevent sticking. You can also customize these energy balls by adding chopped nuts, seeds, or cinnamon—just keep the red rice as your base for maximum nutritional benefits and that beautiful deep color.
