Red Rice Sinangag
Ingredients
- 3 cups cooked Agriko red rice (day-old, chilled)
- 4 cloves garlic, minced
- 3 tbsp cooking oil
- 3 large eggs, beaten
- 1/4 cup diced onions
- 1/2 cup diced ham or tocino
- 1/4 cup fresh scallions, chopped
- 1 tsp fish sauce (patis)
- 1/2 tsp sea salt and black pepper to taste
Instructions
-
Heat 1 tbsp of oil in a large wok or skillet over medium-high heat. Scramble the beaten eggs until cooked through, then set aside.
-
Add remaining 2 tbsp oil to the same pan and stir-fry the minced garlic for 30 seconds until fragrant and golden.
-
Add diced onions and ham (or tocino), sauté for 2-3 minutes until onions are translucent.
-
Add the chilled Agriko red rice, breaking up any clumps with the back of your spatula. Stir-fry for 5-7 minutes until rice is heated through and slightly toasted.
-
Return the cooked eggs to the pan, add fish sauce, salt, and pepper. Toss everything together for 1-2 minutes.
-
Finish with fresh scallions and serve hot. Enjoy with fried fish, longganisa, or sunny-side up eggs on the side.
Always use day-old cooked rice for the best texture—freshly cooked rice tends to clump. If you only have warm rice, spread it on a plate to cool quickly before frying.
