Red Rice Sinangag

Ingredients

  • 3 cups cooked Agriko red rice (day-old, chilled)
  • 4 cloves garlic, minced
  • 3 tbsp cooking oil
  • 3 large eggs, beaten
  • 1/4 cup diced onions
  • 1/2 cup diced ham or tocino
  • 1/4 cup fresh scallions, chopped
  • 1 tsp fish sauce (patis)
  • 1/2 tsp sea salt and black pepper to taste

Instructions

  1. Heat 1 tbsp of oil in a large wok or skillet over medium-high heat. Scramble the beaten eggs until cooked through, then set aside.

  2. Add remaining 2 tbsp oil to the same pan and stir-fry the minced garlic for 30 seconds until fragrant and golden.

  3. Add diced onions and ham (or tocino), sauté for 2-3 minutes until onions are translucent.

  4. Add the chilled Agriko red rice, breaking up any clumps with the back of your spatula. Stir-fry for 5-7 minutes until rice is heated through and slightly toasted.

  5. Return the cooked eggs to the pan, add fish sauce, salt, and pepper. Toss everything together for 1-2 minutes.

  6. Finish with fresh scallions and serve hot. Enjoy with fried fish, longganisa, or sunny-side up eggs on the side.

Chef's Tip

Always use day-old cooked rice for the best texture—freshly cooked rice tends to clump. If you only have warm rice, spread it on a plate to cool quickly before frying.
