Ingredients

  • 1 cup Agriko red rice
  • 6 cups vegetable or chicken broth
  • 1 piece (2-inch) fresh ginger, sliced
  • 4 cloves garlic, minced
  • 1 medium onion, finely chopped
  • 2 tablespoons fish sauce (patis)
  • 2 tablespoons cooking oil
  • Salt and white pepper to taste
  • 2 stalks green onions, chopped (for garnish)
  • 1 hard-boiled egg, sliced (optional garnish)

Instructions

  1. Rinse Agriko red rice under cold water until the water runs almost clear, removing excess starch for a cleaner-tasting lugaw.

  2. Heat cooking oil in a large pot over medium heat. Sauté minced garlic and chopped onion until fragrant and translucent, about 2-3 minutes.

  3. Add the sliced ginger and cook for another minute, then add the rinsed Agriko red rice, stirring constantly for 2 minutes to lightly toast the grains.

  4. Pour in the broth and bring to a boil, then reduce heat to low. Simmer uncovered for 30-35 minutes, stirring occasionally, until the rice breaks down and the mixture reaches a creamy porridge consistency.

  5. Season with fish sauce, salt, and white pepper to taste. Stir well to combine, adding more broth if you prefer a thinner consistency.

  6. Ladle the red rice lugaw into bowls and garnish with fresh green onions and sliced hard-boiled egg. Serve hot with a drizzle of sesame oil if desired.

Chef's Tip

For a richer, creamier lugaw, reserve some cooked red rice grains before simmering and add them back at the end for textural contrast. You can also add protein like shredded chicken, minced pork, or crispy fried shallots to customize your bowl.
