
Red Rice Ginataang Mais
Ingredients
- 1 cup Agriko red rice
- 2 cups fresh corn kernels (or frozen)
- 1 can (400 ml) coconut milk
- 2 cups water
- ½ cup brown sugar or muscovado sugar
- ¼ teaspoon sea salt
- 1 piece pandan leaf (optional, for aroma)
- 2 tablespoons toasted sesame seeds (for garnish)
Instructions

Rinse Agriko red rice thoroughly under cold water until the water runs almost clear, then drain well.

In a heavy-bottomed pot, bring 2 cups of water to a boil. Add the rinsed red rice and pandan leaf if using, then reduce heat to low and simmer for 20-25 minutes until rice is tender but still holds its shape.

Once the rice is cooked, pour in the coconut milk and stir gently to combine, ensuring no lumps form.

Add the fresh corn kernels and brown sugar, stirring continuously until the sugar dissolves completely and the mixture becomes creamy, about 3-4 minutes.

Season with sea salt to taste, stirring well. Simmer for another 3-5 minutes on low heat until the consistency reaches a porridge-like texture with a glossy sheen.

Remove from heat and discard the pandan leaf. Divide into serving bowls and garnish with toasted sesame seeds while still warm.
For a creamier texture, reserve some coconut milk and mix it with a tablespoon of cornstarch, then drizzle it in during the last minute of cooking while stirring constantly. This prevents curdling and creates a silkier mouthfeel.
