  • ½ cup raw almonds and walnuts, roughly chopped
  • 3 tablespoons raw honey or agave nectar
  • 2 tablespoons unsweetened coconut flakes
  • 1 tablespoon chia seeds

Instructions

  1. Rinse Agriko red rice thoroughly under cold running water, stirring gently with your fingers until the water runs nearly clear—this removes excess starch and ensures a fluffier texture.

  2. In a medium saucepan, bring 4 cups of water (or coconut milk for creamier texture) to a boil. Add the rinsed red rice and sea salt, then stir once.

  3. Reduce heat to low, cover with a tight-fitting lid, and simmer for 20-25 minutes until the rice is tender and all liquid is absorbed. Remove from heat and let rest, covered, for 5 minutes.

  4. Fluff the cooked red rice gently with a fork, breaking up any clumps. Divide the warm rice evenly among four bowls.

  5. Top each bowl with a generous dollop of yogurt, fresh berries, chopped nuts, and a sprinkle of coconut flakes and chia seeds.

  6. Drizzle each bowl with honey and serve immediately while the rice is still warm, creating a beautiful contrast with the cool, creamy yogurt and fresh berries.
