Black Rice Taho Parfait

Ingredients

  • 1 cup Agriko black rice
  • 2.5 cups water
  • 1 pack (350g) silken tofu, lightly pressed
  • ½ cup brown sugar
  • ¼ cup water (for syrup)
  • 1 tsp vanilla extract
  • 1 cup fresh mango, diced
  • ½ cup fresh blueberries
  • 2 tbsp toasted coconut flakes (optional garnish)

Instructions

  1. Rinse Agriko black rice thoroughly under cold running water until the water runs clear, removing excess starch.

  2. In a pot, combine rinsed black rice with 2.5 cups water. Bring to a boil, then reduce heat to low, cover, and simmer for 30 minutes until rice is tender and water is absorbed. Let cool slightly.

  3. While rice cooks, prepare the brown sugar syrup by combining brown sugar and ¼ cup water in a small saucepan. Simmer over medium heat for 3-4 minutes until syrupy, then remove from heat and stir in vanilla extract. Allow to cool completely.

  4. In a blender, combine silken tofu with 3 tablespoons of cooled brown sugar syrup until smooth and creamy. Divide evenly among four clear glasses.

  5. Layer the cooled black rice on top of the tofu cream in each glass, filling halfway.

  6. Top with fresh mango pieces and blueberries, then drizzle remaining brown sugar syrup over each parfait. Garnish with toasted coconut flakes if desired.

  7. Serve immediately at room temperature or chilled for a refreshing morning treat.

Chef's Tip

Cook the black rice a day ahead and store it in an airtight container in the refrigerator for quicker assembly during busy mornings. The cooked rice keeps fresh for up to 4 days.
