
Black Rice Pudding with Vanilla Bean
Ingredients
- 1 cup Agriko black rice
- 3 cups unsweetened almond milk
- 1 cup coconut milk
- 1 vanilla bean pod (split and scraped)
- 3 tablespoons pure maple syrup
- ¼ teaspoon sea salt
- ½ teaspoon ground cinnamon
- 1 tablespoon unsalted butter
- Fresh berries and edible flowers for garnish
Instructions

Rinse Agriko black rice thoroughly under cold water until the water runs clear, removing any debris.

In a heavy-bottomed saucepan, combine the rinsed black rice, almond milk, and coconut milk. Bring to a boil over medium-high heat.

Reduce heat to low and add the split vanilla bean pod (seeds and pod), maple syrup, sea salt, and ground cinnamon. Stir gently to combine.

Simmer uncovered for 40-45 minutes, stirring occasionally, until the rice is tender and the mixture reaches a creamy pudding consistency. Add more milk if needed.

Remove from heat and stir in the butter until melted and incorporated. Remove the vanilla bean pod.

Divide the warm black rice pudding into serving glasses or bowls and allow to cool for 5 minutes before serving.

Garnish with fresh berries, a drizzle of maple syrup, edible flowers, or a cinnamon stick for an elegant presentation.
For even creamier pudding, blend a portion of the cooled mixture and fold it back in. The black rice can also be cooked ahead and refrigerated; simply reheat gently with additional milk and serve warm or chilled.
