
Black Rice Energy Balls
Ingredients
- 1 cup Agriko black rice, cooked and cooled
- 1/2 cup natural almond butter
- 1/3 cup pure maple syrup
- 1/4 cup unsweetened cocoa powder
- 1/3 cup dried goji berries, finely chopped
- 1/4 cup raw almonds, finely chopped
- 2 tablespoons virgin coconut oil
- 1 teaspoon vanilla extract
Instructions

Cook Agriko black rice according to package instructions. Once cooked, spread on a plate and refrigerate for 15 minutes until cooled completely.

In a large mixing bowl, combine cooled black rice, almond butter, maple syrup, cocoa powder, and vanilla extract. Mix thoroughly until well combined and the mixture holds together when pressed.

Fold in the chopped goji berries and half of the chopped almonds, reserving the remainder for coating.

Using a tablespoon or small cookie scoop, portion the mixture into 12 equal amounts. Roll each portion between your palms into a smooth, compact ball.

Place reserved chopped almonds in a shallow dish. Roll each energy ball in the almonds until lightly coated on the outside.

Transfer finished balls to a parchment-lined container and refrigerate for at least 1 hour before serving to help them firm up and hold their shape.
For best results, ensure your cooked black rice is completely cooled before mixing—warm rice can make the mixture too moist. Store energy balls in an airtight container in the refrigerator for up to 7 days, or freeze for up to one month.
