Ingredients

  • 1 cup Agriko black rice, finely ground into flour
  • 3/4 cup all-purpose flour
  • 2/3 cup unsweetened cocoa powder
  • 1 1/2 cups granulated sugar
  • 2 tsp baking powder
  • 1/2 tsp sea salt
  • 3 large eggs, room temperature
  • 1/2 cup vegetable oil
  • 1 cup whole milk mixed with 1 tbsp apple cider vinegar
  • 4 oz dark chocolate (70% cacao), melted and cooled

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan. Toast Agriko black rice in a dry pan over medium heat for 3 minutes, then grind finely using a food processor or blender until it resembles flour.

  2. In a large bowl, whisk together black rice flour, all-purpose flour, cocoa powder, sugar, baking powder, and sea salt until well combined and no lumps remain.

  3. In another bowl, beat eggs with an electric mixer for 2 minutes until slightly frothy. Add vegetable oil and mix until emulsified, then stir in the milk-vinegar mixture and cooled melted dark chocolate until smooth.

  4. Create a well in the center of the dry ingredients and pour the wet mixture into it. Fold gently with a spatula until just combined—do not overmix, as lumps are acceptable and contribute to a tender crumb.

  5. Transfer the batter to the prepared pan and smooth the top. Bake for 32-36 minutes, until a toothpick inserted in the center comes out with just a few moist crumbs attached.

  6. Allow the cake to cool in the pan for 10 minutes, then turn out onto a wire rack to cool completely before frosting or serving.
