Ingredients

  • 1.5 cups Agriko black rice
  • 2.5 cups water
  • 1 can (14 oz) coconut milk
  • 1/3 cup sugar
  • 1/4 teaspoon sea salt
  • 2 ripe Philippine mangoes, peeled and sliced
  • 2 tablespoons palm sugar or brown sugar
  • 1 tablespoon toasted sesame seeds (optional garnish)

Instructions

  1. Rinse Agriko black rice thoroughly under cold water, stirring gently with your hand until the water runs almost clear. This removes excess starch and ensures perfectly sticky texture.

  2. In a medium pot, combine rinsed black rice with 2.5 cups water. Bring to a boil over medium-high heat, then reduce to low heat and simmer covered for 30-35 minutes until rice is tender and water is absorbed.

  3. While rice cooks, heat coconut milk in a small saucepan over medium heat (do not boil). Add sugar and salt, stirring until fully dissolved. Remove from heat and set aside.

  4. Once black rice is cooked, transfer to a bowl and pour the warm coconut mixture over it. Stir gently to combine, then let rest for 10 minutes to allow the rice to absorb the creamy coconut flavor.

  5. Toss fresh mango slices with palm sugar in a small bowl, allowing the natural juices to release for 5 minutes.

  6. Divide warm black sticky rice among serving bowls. Top with sweetened mango slices and their syrup, garnish with sesame seeds if desired, and serve immediately while the rice is still warm and the mango is fresh.

Chef's Tip

For the creamiest texture, use full-fat coconut milk and gently fold it into the warm rice rather than stirring vigorously. If you prefer a thinner consistency, reserve 2-3 tablespoons of coconut milk to drizzle over the finished dish instead of mixing entirely.
