
Black Rice Suman
Ingredients
- 1 cup Agriko black rice
- 1 cup sticky white rice
- 1 can (14 oz) coconut milk
- 3/4 cup brown sugar
- 1/2 tsp sea salt
- 8-10 pieces fresh banana leaves (cut into 8x10 inch rectangles)
- 1 tsp vanilla extract
- 1/4 tsp ground cardamom (optional)
Instructions

Rinse Agriko black rice and sticky white rice separately under cold running water until the water runs clear, then drain well.

In a medium pot, combine the rinsed black rice, sticky rice, coconut milk, brown sugar, sea salt, vanilla extract, and cardamom. Stir well to combine.

Bring the mixture to a boil over medium-high heat, stirring occasionally. Once boiling, reduce heat to low, cover, and simmer for 30-35 minutes until rice is fully cooked and creamy, stirring every 10 minutes to prevent sticking.

While the rice cooks, prepare banana leaves by gently passing them over an open flame to soften and make them pliable, or blanch in hot water for 2 minutes.

Once the black rice mixture is cooked and cooled slightly (about 5 minutes), divide evenly into portions. Place about 3-4 tablespoons of the mixture onto the center of each banana leaf.

Fold the banana leaf edges over the rice mixture like an envelope, ensuring all sides are sealed. Place seam-side down on a steamer rack.

Steam the wrapped suman over boiling water for 10 minutes to set the shape and enhance the banana leaf flavor. Cool for 5 minutes before serving.
Soak banana leaves in warm water for 10 minutes before folding if they crack easily—this makes them more flexible and prevents tearing. Prepare the suman early in the day and steam just before serving for the best texture and flavor.
