Ingredients

  • 1 cup Agriko black rice
  • 6 cups vegetable or chicken broth
  • 1 thumb fresh ginger, sliced
  • 4 cloves garlic, minced
  • 1 medium yellow onion, diced
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon sea salt (or to taste)
  • ¼ teaspoon cracked black pepper
  • 2 stalks green onions, chopped (for garnish)
  • 1 tablespoon toasted sesame oil (optional garnish)

Instructions

  1. Rinse Agriko black rice under cold running water, gently rubbing the grains between your fingers until the water runs almost clear. This removes excess starch and ensures a cleaner, more refined texture.

  2. Heat olive oil in a large pot over medium heat. Sauté the diced onion and sliced ginger for 2-3 minutes until fragrant and translucent, then add minced garlic and cook for another minute until aromatic.

  3. Add the rinsed black rice to the pot and stir continuously for 2 minutes, toasting the grains to enhance their nutty flavor and seal in their nutrients.

  4. Pour in the vegetable or chicken broth and bring to a boil over medium-high heat. Once boiling, reduce heat to low, cover partially with a lid, and simmer for 35-40 minutes, stirring occasionally to prevent sticking and achieve a creamy consistency.

  5. The lugaw is ready when the black rice is tender and the broth has thickened into a porridge-like consistency. Season with sea salt and black pepper to taste, adjusting the broth-to-rice ratio if you prefer a thinner or thicker consistency.

  6. Ladle the Black Rice Lugaw into serving bowls and garnish generously with fresh chopped green onions. Drizzle with toasted sesame oil if desired for added depth and aroma.

Chef's Tip

For extra creaminess and richness, reserve ¼ cup of cooked black rice, blend it with a splash of broth, and stir back into the pot during the last 5 minutes of cooking. This creates a silkier, more luxurious texture while maintaining the beautiful dark color of Agriko black rice.
