
Black Rice Buddha Bowl
Ingredients
- 2 cups Agriko black rice
- 4 cups vegetable broth or water
- 1 medium ripe avocado, sliced
- 1 cup roasted chickpeas (seasoned with cumin and paprika)
- 2 cups mixed microgreens and spinach
- 1 medium cucumber, julienned
- 1 large beetroot, roasted and cubed
- ¼ cup tahini dressing (tahini, lemon juice, garlic, water, salt)
- 3 tablespoons toasted sesame seeds
- 2 scallions, thinly sliced
Instructions

Rinse Agriko black rice thoroughly under cold running water until the water runs clear, removing any excess starch.

In a medium saucepan, bring vegetable broth to a boil, then add the rinsed black rice. Reduce heat to low, cover, and simmer for 30 minutes until rice is tender and liquid is absorbed.

While rice cooks, prepare your toppings: roast the chickpeas at 400°F for 15 minutes, roast beetroot cubes for 20 minutes, and whisk together tahini dressing ingredients in a small bowl.

Fluff the cooked black rice with a fork and divide evenly among four bowls, creating a base layer.
