
Black Rice Tabbouleh
Ingredients
- 1 cup Agriko black rice
- 2 cups vegetable broth or water
- 1 cup fresh parsley, finely chopped
- ½ cup fresh mint, finely chopped
- ¾ cup cherry tomatoes, diced
- ½ cup cucumber, finely diced
- ¼ cup extra virgin olive oil
- 3 tbsp fresh lemon juice
- 1 garlic clove, minced

Instructions

Rinse Agriko black rice under cold running water for 1-2 minutes until water runs clear, removing excess starch.

In a medium pot, bring vegetable broth to a boil. Add rinsed black rice, stir once, then reduce heat to low. Cover and simmer for 25-30 minutes until rice is tender and liquid is absorbed. Remove from heat and let rest covered for 5 minutes.

Transfer cooked black rice to a large mixing bowl and fluff with a fork. Allow to cool to room temperature for 10 minutes.

While rice cools, prepare the dressing by whisking together olive oil, fresh lemon juice, minced garlic, salt, and pepper in a small bowl.

Add chopped parsley, mint, diced tomatoes, and cucumber to the cooled black rice and gently toss to combine.

Pour the lemon-olive oil dressing over the salad and toss thoroughly until all ingredients are evenly coated and dressed.

Taste and adjust seasoning with additional salt, pepper, or lemon juice as desired. Let rest for 10 minutes before serving to allow flavors to meld. Serve at room temperature or chilled.
For best flavor development, prepare this tabbouleh 1-2 hours ahead and refrigerate. The black rice's deep purple-black color will intensify slightly as it sits, and the flavors will meld beautifully. You can also add diced red onion or pomegranate seeds for extra texture and visual pop.
