
Red Rice with Sinigang
Ingredients
- 2 cups Agriko red rice
- 1.5 lbs pork ribs or brisket, cut into chunks
- 8-10 pieces radish (labanos), quartered
- 3 bundles kangkong or spinach
- 2 packets sinigang mix or 12-15 pieces tamarind pods
- 6 cups water or beef broth
- 3 cloves garlic, minced
- 1 medium onion, quartered
- 2 tbsp fish sauce (patis)
Instructions

Rinse Agriko red rice under cold water until water runs clear. Set aside.

In a large pot, bring water or broth to a boil. Add pork, minced garlic, and quartered onion. Simmer for 20 minutes until pork is partially tender, skimming off any scum that rises.

Add the sinigang mix (or tamarind pods) and rinsed Agriko red rice. Stir well to combine and bring back to a gentle boil.

Reduce heat to low, cover, and simmer for 25-30 minutes until red rice is cooked through and liquid is mostly absorbed. Stir occasionally to prevent sticking.

Add radish pieces and season with fish sauce. Continue simmering for 5 minutes until radish is tender-crisp.

Just before serving, fold in fresh kangkong or spinach until wilted. Adjust seasoning to taste and serve hot.
For deeper sinigang flavor, crush the tamarind pods slightly before adding to release more tartness. If using sinigang mix packets, follow package instructions for optimal sourness. Agriko red rice holds its firm texture beautifully in broth-based dishes—avoid over-stirring once the rice begins cooking to maintain individual grain integrity.
