Ingredients

  • 2 cups Agriko red rice
  • 4 cups vegetable broth or water
  • 2 medium sweet potatoes, cubed
  • 1 bunch fresh spinach or kale, chopped
  • 2 ripe avocados, sliced
  • 1 cup roasted chickpeas (seasoned with cumin and paprika)
  • 3 tablespoons tahini
  • 2 tablespoons fresh lemon juice
  • 1 clove garlic, minced
  • 2 tablespoons extra virgin olive oil

Instructions

  1. Rinse Agriko red rice under cold running water until the water runs clear, removing excess starch and debris.

  2. In a medium pot, bring vegetable broth to a boil, add the rinsed red rice, reduce heat to low, cover, and simmer for 25-30 minutes until rice is tender and liquid is absorbed.

  3. While rice cooks, toss cubed sweet potatoes with olive oil, salt, and pepper; roast at 400°F for 20-25 minutes until caramelized and tender.

  4. Prepare the tahini dressing by whisking together tahini, lemon juice, minced garlic, 3 tablespoons water, salt, and pepper until smooth and drizzle-able.

  5. Lightly sauté chopped spinach or kale in a separate pan with a pinch of salt for 2-3 minutes until wilted, then set aside.

  6. Divide cooked Agriko red rice among four bowls as the base, then arrange roasted sweet potatoes, sautéed greens, avocado slices, and roasted chickpeas on top in sections.

  7. Drizzle tahini dressing generously over each bowl and serve warm, optionally garnishing with fresh cilantro, sesame seeds, or lime wedges.
