Ingredients

  • 2 cups Agriko red rice
  • 4 cups water or vegetable broth
  • 1 cup fresh spinach, blanched and seasoned
  • 1 cup shredded carrots, lightly sautéed
  • 1 cup sliced mushrooms, sautéed with garlic
  • 1 cup cooked zucchini, cut into matchsticks
  • 4 large eggs
  • 4 tablespoons gochujang (Korean red chili paste)
  • 2 tablespoons sesame oil
  • 2 tablespoons toasted sesame seeds

Instructions

  1. Rinse Agriko red rice under cold water until the water runs clear, then cook in 4 cups of water or vegetable broth for 25-30 minutes until tender and the grains are fully cooked.

  2. While the rice cooks, prepare all vegetables: blanch spinach and season with salt and sesame oil, sauté mushrooms with minced garlic, lightly pan-fry shredded carrots, and cook zucchini matchsticks until tender.

  3. In a small bowl, mix gochujang with 2 tablespoons of water, 1 tablespoon sesame oil, and 1 teaspoon sugar to create a smooth sauce.

  4. Divide the cooked Agriko red rice evenly among four bowls, creating a slight indent in the center of each.

  5. Arrange the prepared vegetables in separate sections on top of each rice bowl in a traditional bibimbap pattern, leaving the center slightly exposed.

  6. Fry one egg per bowl until the white is set but the yolk remains runny, then place gently in the center of each bibimbap bowl.

  7. Drizzle the gochujang sauce over each bowl, sprinkle with toasted sesame seeds, and serve immediately. Mix everything together vigorously just before eating.

Chef's Tip

For best results, fry your egg in the same pan after cooking the vegetables so the residual oil flavors enhance the egg. Keep all components warm and assemble bowls just before serving to maintain the textural contrast between warm rice and crispy egg.
