
Ginataang Black Rice
Ingredients
- 1 cup Agriko black rice
- 3 cups water
- 1 can (400ml) coconut milk
- 1/2 cup brown sugar
- 1/4 teaspoon sea salt
- 1 piece (2 inches) pandan leaf (optional but recommended)
- 1/4 teaspoon vanilla extract
- Topping fresh coconut cream or evaporated milk for serving
Instructions

Rinse Agriko black rice thoroughly under cold running water for 2-3 minutes until the water runs clear, removing excess starch.

In a heavy-bottomed pot, bring 3 cups of water to a boil. Add the rinsed black rice and pandan leaf (if using), then reduce heat to low and simmer covered for 30-35 minutes until rice is tender and most water is absorbed.

Stir in the brown sugar and sea salt until fully dissolved into the cooked rice.

Pour in the coconut milk slowly while stirring constantly to prevent lumps, ensuring even distribution throughout the rice.

Continue simmering on low heat for 8-10 minutes, stirring occasionally, until the mixture becomes creamy and reaches your desired consistency.

Remove from heat, discard the pandan leaf, and stir in vanilla extract for added depth of flavor.

Divide into serving bowls and drizzle generously with coconut cream or evaporated milk. Serve warm or chilled, according to preference.
