
Black Rice with Coconut Milk and Latik
Ingredients
- 1 cup Agriko black rice
- 2 cups water
- 1 can (400ml) coconut milk
- 1/2 cup brown sugar
- 1/4 teaspoon sea salt
- 1/2 teaspoon vanilla extract
- 3/4 cup coconut cream (for latik)
- 2 tablespoons toasted sesame seeds (optional garnish)
Instructions

Rinse Agriko black rice thoroughly under cold running water until the water runs clear, removing excess starch and impurities.

In a pot, combine rinsed black rice with 2 cups of water and bring to a boil. Reduce heat to low, cover, and simmer for 30-35 minutes until rice is tender and water is absorbed.

While rice cooks, prepare the latik by heating coconut cream in a separate small pan over medium heat, stirring constantly for 8-10 minutes until golden brown solids (latik) separate from the clear oil. Strain and set aside both components.

Once rice is cooked, stir in the coconut milk, brown sugar, and sea salt. Mix gently until sugar dissolves completely. Simmer for 5 minutes, stirring occasionally.

Remove from heat and stir in vanilla extract for depth of flavor.

Pour the black rice pudding into serving bowls and drizzle generously with the reserved latik oil. Sprinkle the crispy latik bits and toasted sesame seeds on top for texture and visual appeal.

Serve warm or at room temperature. The dish can be prepared ahead and refrigerated for up to 2 days, then reheated gently before serving.
