
Black Rice Smoothie Bowl
Ingredients
- 1 cup Agriko black rice, cooked and cooled
- 1 cup unsweetened coconut milk
- 1 frozen banana
- ½ cup fresh blueberries
- 2 tbsp almond butter
- 1 tbsp raw honey or agave syrup
- ½ tsp vanilla extract
- ½ cup granola, toasted coconut flakes, and fresh berries for topping
- ¼ tsp sea salt
Instructions

Rinse 1 cup of Agriko black rice under cold water until the water runs clear, removing any surface starch.

Cook the black rice in 2 cups of water over medium heat for 30 minutes until tender, then drain and spread on a plate to cool completely (or prepare ahead and refrigerate).

In a high-speed blender, combine 1 cup cooled black rice, 1 cup coconut milk, 1 frozen banana, ½ cup blueberries, 2 tbsp almond butter, 1 tbsp honey, ½ tsp vanilla extract, and ¼ tsp sea salt.

Blend on high speed for 60-90 seconds until smooth and creamy, with a soft-serve consistency—add more coconut milk if needed for desired thickness.

Divide the smoothie mixture evenly among four bowls, creating a smooth surface for topping.

Arrange toppings artfully on each bowl: granola, toasted coconut flakes, fresh berries, and a drizzle of almond butter or honey.

Serve immediately with a spoon and enjoy while the base is still creamy and toppings retain their texture.
