
Black Rice Bibimbap
Ingredients
- 2 cups Agriko black rice
- 4 cups water or vegetable broth
- 2 cups fresh spinach, blanched and seasoned
- 1 cup julienned carrots, lightly sautéed
- 1 cup sliced mushrooms, pan-fried with garlic
- 1 cucumber, julienned fresh cucumber
- 4 fried eggs (sunny-side up)
- 6 tablespoons gochujang (Korean red chili paste)
- 2 tablespoons sesame oil
- 2 tablespoons toasted sesame seeds
Instructions

Rinse Agriko black rice thoroughly under cold running water until the water runs clear, about 2-3 minutes, to remove excess starch.

In a pot, combine rinsed black rice with 4 cups of water or vegetable broth. Bring to a boil, then reduce heat to low, cover, and simmer for 30 minutes until rice is tender and liquid is absorbed. Let rest for 5 minutes.

While rice cooks, prepare the vegetable toppings: blanch spinach with salt and garlic, sauté mushrooms with minced garlic in sesame oil, and lightly cook julienned carrots. Keep cucumber raw and fresh.

Prepare the gochujang sauce by mixing gochujang with 1 tablespoon of sesame oil and 1 tablespoon of water until smooth and pourable.

Fry eggs sunny-side up in a separate skillet, keeping the yolks runny.

Divide the cooked Agriko black rice into 4 serving bowls. Arrange each vegetable topping in separate sections on top of the rice, creating a colorful pattern.

Place one fried egg in the center of each bowl, drizzle with gochujang sauce, sprinkle with toasted sesame seeds and a light drizzle of sesame oil. Serve immediately and mix well before eating.
For the best texture and color retention, avoid over-stirring the black rice while cooking—use a rice cooker if available for perfectly fluffy grains.
